ბრაზილია ნატურალური დამუშავების ესპრესო | Araponga

This coffee comes from Araponga in the Matas de Minas region of Brazil, an area known for its high elevations and diverse microclimates. After harvest, the cherries are sorted by density in water before being transferred to raised drying beds.
During the first two days, the coffee is kept in thicker layers to encourage natural fermentation. As moisture levels decrease, the layers are gradually thinned and the beds are covered to slow the drying process and ensure even moisture loss. Total drying time is approximately 10 days. In the cup, expect notes of milk chocolate, apple, macadamia and toffee.
