Alsu Karimova
Head Roaster
As Head Roaster for Shavi, Alsu is the alchemist behind our bold and adventurous profiles. She is always looking for experimental lots and unusual flavour profiles. Her journey in specialty coffee began behind the espresso machine, which gives her a rare 360-degree view of how a roast becomes a cup. Alsu leads our quality control, develops the flavour profiles that define Shavi, and makes sure every bag that leaves our roastery is a true expression of our rebellious Georgian spirit. She is also a Global Coffee Awards judge.

Thibault Tughushi-Flament
Co-founder
A civil engineer by training, Thibault came to coffee as a rediscovered passion. As co-founder of Shavi he champions a philosophy of care: close attention to every person and every step of coffee's journey, from the farmer to the final cup. He drives Shavi's adventurous spirit and leads our work educating the Georgian market about specialty coffee. For Thibault, the perfect cup is one that is shared, debated and pushes the boundaries of what coffee can be.

Anastasia Costache
Co-Owner
Anastasia brings hospitality and marketing experience from New York, Dubai, Miami and beyond. As the creative strategist shaping Shavi's identity, she combines a sharp eye for trends with a deep instinct for culture, and oversees everything from café atmosphere and customer experience to brand storytelling. She drives a culture where craft, community and innovation thrive.
