Colombia Popayán Decaf Washed Omni

This coffee comes from Popayán in Cauca, Colombia, grown at around 1,700 masl under stable mountain conditions. It is sourced from approximately 75 smallholder producers, who receive quality premiums based on cup evaluation. After harvest, the cherries are carefully selected, depulped, fully washed to remove the mucilage, and dried on raised beds for 5–7 days.

The coffee is decaffeinated using the sugarcane ethyl acetate (EA) process: the beans are steamed and soaked in water before being placed in contact with naturally derived EA for approximately 8 hours to remove caffeine, then dried back to their original moisture level.
