La Victoria from the Santa Maria Community in Huila, Colombia, is a beautifully structured group lot showcasing the dedication of the "Productores del Futuro" initiative. Grown at the foot of the Huila Volcano, this fully washed coffee features varieties like Caturra, Castillo, Colombia, and a touch of Pink Bourbon, cultivated at elevations up to 2,200 meters. The result is a vibrant cup profile of cacao powder, roasted almond, and a hint of dried fruits.

By carefully fermenting and washing the cherries, the producers ensure exceptional flavor clarity. This project goes beyond coffee, focusing on empowering farmers and uplifting communities through sustainable practices and stable, fair pricing.

From Santa Maria Community | La Victoria | Colombia

La Victoria is our group lot, which includes producers in and around Santa Maria and Palermo, in Huila, Colombia. The contributing farmers are part of our piooner project "Productores del futuro" (Producers of the future). Their farms sit at an elevation of 1700-2200 m.a.s.l., around the foothills of the Huila Volcano (National Park Nevados de Huila). The main varieties are Castillo, Pink bourbon, Caturro, Chiroso, San Bernardo, Typica.

La Victoria is a group lot of exceptional coffees scoring between 84.5 to 85 points, known for its stable cup profile featuring a lingering milk-chocolate layer and vibrant citrus fruit acidity that comes from Typica variety. This makes the coffee an excellent candidate for both filter (sweet!) and espresso.

To achieve this quality, producers meticulously select only ripe cherries, ferment them for 24 hours, and then for an additional 36-72 hours after de-pulping. The coffee is then washed and typically dried on patios.
