Indonesia West Java Sadayana Anaerobic Natural Filter

In the highlands of West Java near Rancabali is small-often under 1 hectare-and is tended by hand using traditional farming methods passed down through generations.

In 2022, the Sadayana Washing Station was established to support local farmers and improve access to specialty coffee production. It provides shared infrastructure, training, and support for hundreds of smallholders in the region.

At Sadayana, cherries are carefully sorted and undergo a 72-hour anaerobic natural fermentation in sealed barrels, followed by slow drying on raised beds and patios. This controlled process enhances sweetness, fruit complexity, and clarity in the final cup.

The result is a coffee shaped by its origin and careful processing-grown by small farmers in West Java and refined through modern fermentation techniques.
