This coffee comes from Finca Monteblanco in Huila, Colombia, managed by Rodrigo Sánchez Valencia. Ripe cherries are pulped, sealed in GrainPro bags, and fermented for approximately 76 hours at 10–14 °C in a controlled cold environment. This slow fermentation allows for even development before the coffee is washed and dried, resulting in a cup that is clean, structured, and complex.
We chose this coffee for its bright, distinctive profile. When first cupped by our team, it reminded us of candy, hibiscus, and lemon — a character shaped directly by its precise fermentation process and careful post-harvest handling.
