Keramo cherries are processed at Keramo Washing Station. Keramo is some of the highest elevation coffees from Ethiopia, with elevations up to 2360 meter above sea level. The beans are very dense, with heavy concentration of the smaller screen sizes (the majority of the coffee screen sizes at 13-14). This reflects slow maturation at higher altitudes.

The coffee cherries undergo a natural processing method, where they are carefully hand-picked at their peak of ripeness. Instead of removing the pulp before drying, the cherries are left intact, allowing them to dry naturally in the sun. This natural process imparts distinctive flavors and characteristics to the beans.

During the drying stage, the beans are regularly turned to ensure even drying and to prevent mold or defects. This meticulous attention to detail in the drying process contributes to the exceptional quality of the beans.

When brewed, this coffee exhibits a rich and complex flavor profile. It often features pronounced fruity notes, including berry, stone fruit, and tropical flavors. The cup may also showcase floral and wine-like characteristics, with a medium to full body and a smooth, lingering finish.
