Jorge Rojas, a fourth-generation coffee grower, manages Finca El Jardin in Planadas, Tolima, Colombia. Introduced to coffee farming at 13, he learned under his mother’s guidance. Inheriting part of his father’s farm and acquiring neighboring land, Jorge founded his own Finca El Jardin.
Family involvement is key to Jorge’s coffee production. They work together to innovate and create exceptional coffee. Jorge also runs his brand, La Roca, where he personally roasts coffee. He’s building a wet mill to process cherries from nearby farmers, boosting production.
Finca El Jardin, with three hectares dedicated solely to coffee, houses various varieties like 4,000 Caturra, 7,000 Yellow Colombia, 1,000 Pink Bourbon, 800 Wush Wush, and 1,000 Geisha. Jorge’s unique fermentation and drying process starts with handpicking perfectly ripe cherries. They’re sealed in tanks for 72 hours, depulped, and fermented for an additional 38 hours. Then, the coffee is washed to remove mucilage.
The coffee undergoes precise drying: mechanically dried at 30°C for 28 hours, followed by 24 hours in fique bags at 20-24°C, and 48 hours in a greenhouse at 30-34°C. After 24 hours of resting in fique sacks, it’s mechanically dried at 38°C for 48 hours. Finally, the coffee is cooled, stabilized, and packed.
